So a customer of mine has added some columns to a Document Library.
He wants to sort by this "Category" column, but MOSS (2007) doesn't offer the option to choose that column to create a Sorted custom view.
Is it because of the column type (Choice) or because it isn't recognized column in the site def? Or something else?

Is it a multiple choice field? You can't sort on those. Choice fields
that only allow a single selection should sort just fine.
